- Zucchini - 1 medium, sliced
- Cherry tomatoes - 200 grams, halved
- Fish stock - 500 ml
- Saffron threads - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Sea bass fillets - 300 grams, cut into chunks
- Shrimp - 150 grams, peeled and deveined
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and diced red bell pepper, cooking for an additional 2 minutes until fragrant.
- Add the sliced zucchini and cherry tomatoes to the pot, cooking for another 3-4 minutes until the vegetables start to soften.
- Pour in the fish stock and add the saffron threads. Bring the mixture to a gentle simmer.
- Add the fish chunks and shrimp to the pot, cooking for about 5-7 minutes until the seafood is cooked through and opaque.
- Stir in the lemon juice, chopped parsley, and dill. Season with salt and black pepper to taste.
