  • Red bell pepper - 1, diced
  • Zucchini - 1 medium, sliced
  • Cherry tomatoes - 200 grams, halved
  • Fish stock - 500 ml
  • Saffron threads - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Sea bass fillets - 300 grams, cut into chunks
  • Shrimp - 150 grams, peeled and deveined
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and diced red bell pepper, cooking for an additional 2 minutes until fragrant.
  3. Add the sliced zucchini and cherry tomatoes to the pot, cooking for another 3-4 minutes until the vegetables start to soften.
  4. Pour in the fish stock and add the saffron threads. Bring the mixture to a gentle simmer.
  5. Add the fish chunks and shrimp to the pot, cooking for about 5-7 minutes until the seafood is cooked through and opaque.
  6. Stir in the lemon juice, chopped parsley, and dill. Season with salt and black pepper to taste.
  7. Serve the stew hot, garnished with additional fresh herbs if desired.
