- Shrimp - 150 grams, peeled and deveined
- White fish (e.g., cod, haddock) - 150 grams, cut into chunks
- Mussels - 150 grams, cleaned
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - from 1 lemon
Steps
- Heat the olive oil in a large pot over medium heat. Add the minced garlic and diced onion, sautéing until the onion is translucent.
- Add the diced bell pepper and cook for an additional 2-3 minutes until softened.
- Stir in the diced tomatoes, fish stock, dried oregano, dried thyme, salt, and black pepper. Bring the mixture to a gentle simmer.
- Allow the soup to simmer for about 10 minutes to meld the flavors together.
- Add the shrimp, white fish, and mussels to the pot. Cover and cook for another 5-7 minutes, or until the seafood is cooked through and the mussels have opened.
