Ingredients

  • Cucumber - 1 medium, diced
  • Cherry tomatoes - 200 grams, halved
  • Red bell pepper - 1 medium, diced
  • Red onion - 1/4 medium, thinly sliced
  • Kalamata olives - 50 grams, pitted and halved
  • Feta cheese - 100 grams, crumbled
  • Extra virgin olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Wash and dice the cucumber, halve the cherry tomatoes, and dice the red bell pepper.
  2. Thinly slice the red onion and halve the Kalamata olives.
  3. In a large mixing bowl, combine the diced cucumber, cherry tomatoes, red bell pepper, red onion, and Kalamata olives.
  4. Add the crumbled feta cheese to the bowl with the vegetables.
  5. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and black pepper to create the dressing.
  6. Pour the dressing over the salad ingredients and gently toss everything together until well combined.
