Ingredients
- Cauliflower - 300 grams
- Mozzarella cheese (shredded) - 100 grams
- Parmesan cheese (grated) - 30 grams
- Egg - 1 large
- Oregano (dried) - 1 teaspoon
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Cherry tomatoes - 100 grams, halved
- Feta cheese - 50 grams, crumbled
- Kalamata olives - 30 grams, sliced
- Spinach (fresh) - 50 grams
Steps
- Preheat the oven to 220°C (425°F) and line a baking sheet with parchment paper.
- Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
- Steam the riced cauliflower for about 5 minutes until tender, then let it cool slightly.
- Transfer the steamed cauliflower to a clean kitchen towel and wring out as much moisture as possible.
- In a mixing bowl, combine the cauliflower, mozzarella cheese, parmesan cheese, egg, oregano, garlic powder, salt, and pepper. Mix until well combined.
- Spread the cauliflower mixture onto the prepared baking sheet, shaping it into a round pizza crust about 1 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and firm.
- Remove the crust from the oven and brush with olive oil. Top with halved cherry tomatoes, crumbled feta cheese, sliced olives, and fresh spinach.
- Return the pizza to the oven and bake for an additional 10 minutes until the toppings are heated through.
- Allow to cool for a few minutes before slicing and serving.
