Ingredients

  • Cauliflower - 300 grams
  • Mozzarella cheese (shredded) - 100 grams
  • Parmesan cheese (grated) - 30 grams
  • Egg - 1 large
  • Oregano (dried) - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Cherry tomatoes - 100 grams, halved
  • Feta cheese - 50 grams, crumbled
  • Kalamata olives - 30 grams, sliced
  • Spinach (fresh) - 50 grams

Steps

  1. Preheat the oven to 220°C (425°F) and line a baking sheet with parchment paper.
  2. Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
  3. Steam the riced cauliflower for about 5 minutes until tender, then let it cool slightly.
  4. Transfer the steamed cauliflower to a clean kitchen towel and wring out as much moisture as possible.
  5. In a mixing bowl, combine the cauliflower, mozzarella cheese, parmesan cheese, egg, oregano, garlic powder, salt, and pepper. Mix until well combined.
  6. Spread the cauliflower mixture onto the prepared baking sheet, shaping it into a round pizza crust about 1 cm thick.
  7. Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and firm.
  8. Remove the crust from the oven and brush with olive oil. Top with halved cherry tomatoes, crumbled feta cheese, sliced olives, and fresh spinach.
  9. Return the pizza to the oven and bake for an additional 10 minutes until the toppings are heated through.
  10. Allow to cool for a few minutes before slicing and serving.
