  • olive oil - 1 tablespoon
  • onion - 1 medium, diced
  • garlic - 2 cloves, minced
  • carrots - 2 medium, diced
  • celery - 2 stalks, diced
  • red bell pepper - 1, diced
  • chicken breast - 200 grams, diced
  • vegetable broth - 500 milliliters
  • canned chickpeas - 1 cup, drained and rinsed
  • mastic resin - 1 teaspoon, ground
  • lemon juice - 1 tablespoon
  • fresh parsley - 2 tablespoons, chopped
  • salt - to taste
  • black pepper - to taste

Steps

  1. In a large pot, heat the olive oil over medium heat and add the diced onion, cooking until translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Stir in the diced carrots, celery, and red bell pepper, cooking for about 5-7 minutes until they start to soften.
  4. Add the diced chicken breast to the pot and cook until browned on all sides, about 5 minutes.
  5. Pour in the vegetable broth and bring to a gentle simmer.
  6. Add the canned chickpeas, ground mastic resin, and season with salt and black pepper to taste.
