Ingredients
- Basmati rice - 150 grams
- Water - 400 ml
- Masticha resin - 1 teaspoon (finely ground)
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 200 ml
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and ground masticha resin to the saucepan, cooking for an additional 1-2 minutes until fragrant.
- Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the onion and oil mixture.
- Pour in the vegetable broth and water, and add the salt and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes until the rice is cooked and liquid is absorbed.
- Remove the saucepan from heat and let it sit, covered, for 5 minutes.
- Fluff the rice with a fork, then stir in the lemon juice and chopped parsley before serving.
