Ingredients

  • Almond flour - 100 grams
  • Coconut milk - 250 ml
  • Water - 250 ml
  • Mastic resin (ground) - 1 teaspoon
  • Honey (optional) - 1 tablespoon
  • Chia seeds - 2 tablespoons
  • Salt - a pinch
  • Ground cinnamon - 1/2 teaspoon
  • Chopped nuts (e.g., almonds or walnuts) - 30 grams
  • Fresh fruit (e.g., berries or banana) - 100 grams

Steps

  1. In a medium saucepan, combine the almond flour, coconut milk, water, and a pinch of salt. Stir well to avoid lumps.
  2. Heat the mixture over medium heat, stirring continuously until it begins to thicken, about 5-7 minutes.
  3. Add the ground mastic resin and ground cinnamon to the thickened mixture, stirring until well incorporated.
  4. Once the porridge reaches your desired consistency, remove it from the heat and let it cool for a minute.
  5. Stir in the chia seeds and let the porridge sit for an additional 5 minutes to allow the chia to expand and thicken the mixture further.
  6. Serve the porridge warm, drizzling honey on top if desired, and garnish with chopped nuts and fresh fruit.
