Ingredients

  • Heavy cream - 200 ml
  • Full-fat milk - 100 ml
  • Granulated sugar - 100 g
  • Mastic resin (ground) - 1 tsp
  • Egg yolks - 2 large
  • Vanilla extract - 1/2 tsp
  • Salt - a pinch

Steps

  1. In a small saucepan, heat the milk and heavy cream over medium heat until just simmering, then remove from heat.
  2. In a bowl, whisk together the egg yolks, sugar, and salt until the mixture is pale and creamy.
  3. Slowly pour the hot milk mixture into the egg yolk mixture, whisking constantly to temper the eggs.
  4. Return the combined mixture to the saucepan and cook over low heat, stirring constantly until it thickens slightly and coats the back of a spoon (about 5-7 minutes).
  5. Remove from heat and stir in the ground mastic resin and vanilla extract until fully incorporated.
  6. Let the mixture cool to room temperature, then refrigerate for at least 2 hours or until chilled.
  7. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
