- Lentils - 100 grams, rinsed
- Fresh parsley - 2 tablespoons, chopped

Steps
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and garlic, sautéing until translucent, about 5 minutes.
- Stir in the carrot, celery, and red bell pepper, cooking for another 5 minutes until softened.
- Add the zucchini and diced tomato, cooking for an additional 3 minutes.
- Pour in the vegetable broth and bring to a boil.
- Add the rinsed lentils, reduce heat to low, and simmer for 20 minutes or until the lentils are tender.
- Season with salt, black pepper, and fresh parsley.
- Stir in the lemon juice before serving.
