Ingredients
- Feta cheese - 200 grams
- Zucchini - 1 medium, sliced
- Red bell pepper - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Red onion - 1 small, sliced
- Olive oil - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Pita bread - 2 pieces
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, combine the sliced zucchini, diced red bell pepper, halved cherry tomatoes, sliced red onion, olive oil, oregano, salt, and black pepper. Toss well to coat the vegetables with the seasoning.
- Spread the vegetable mixture evenly on a baking sheet lined with parchment paper and bake for 20 minutes, or until the vegetables are tender.
- While the vegetables are baking, crumble the feta cheese into a bowl and mix in chopped parsley.
- After 20 minutes, remove the baking sheet from the oven and make small wells in the roasted vegetables. Spoon the feta cheese mixture into the wells.
- Return the baking sheet to the oven and bake for an additional 10-15 minutes, or until the feta is golden and slightly melted.
- Warm the pita bread in the oven for the last 5 minutes of cooking.
- Serve the baked Mastelo hot, accompanied by the warm pita bread.
