- Oregano - 1 teaspoon, dried

Steps
- Clean the octopus by removing the beak and ink sac, then rinse thoroughly under cold water.
- In a large pot, bring salted water to a boil and add the octopus. Simmer for 30-40 minutes until tender, then drain and let cool.
- While the octopus is cooling, prepare the marinade by whisking together olive oil, lemon juice, red wine vinegar, minced garlic, chopped parsley, oregano, salt, black pepper, and chili flakes in a bowl.
- Once the octopus has cooled, chop it into bite-sized pieces and add it to the marinade. Mix well to ensure the octopus is evenly coated.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled or at room temperature, garnished with additional parsley if desired.
