Ingredients

  • Artichoke hearts - 400 grams (canned or jarred, drained)

  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Crushed red pepper flakes - 1/2 teaspoon (optional)

Steps

  1. In a mixing bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, fresh parsley, salt, black pepper, lemon juice, and crushed red pepper flakes (if using).
  2. Add the drained artichoke hearts to the bowl and gently toss until they are well coated with the marinade.
  3. Cover the bowl and let the artichokes marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
