Ingredients

  • All-purpose flour - 200 grams
  • Eggs - 1 large
  • Water - 50 ml
  • Salt - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1/2 teaspoon
  • Ground cinnamon - 1/4 teaspoon
  • Chopped fresh parsley - 2 tablespoons
  • Black pepper - to taste
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. In a large bowl, mix the flour and salt. Create a well in the center and add the egg and water. Mix until a dough forms. Knead for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.
  2. Roll out the dough on a floured surface to about 2 mm thick. Cut into strips or squares, approximately 4x4 cm.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute.
  4. Add the cumin, cinnamon, and black pepper to the skillet, mixing well to combine the spices with the onion mixture. Cook for another 2 minutes.
  5. Bring a pot of salted water to a boil. Add the pasta pieces and cook for about 3-4 minutes or until they float to the surface. Drain the pasta and add it to the skillet with the onion mixture.
  6. Toss the pasta gently to coat it with the spices and onion. Stir in the chopped parsley and crumbled feta cheese if using. Cook for an additional 2 minutes to heat through.
  7. Serve warm, garnished with extra parsley and feta if desired.
