- All-purpose flour - 200 grams
- Eggs - 1 large
- Water - 50 ml
- Salt - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ground cumin - 1/2 teaspoon
- Ground cinnamon - 1/4 teaspoon
- Chopped fresh parsley - 2 tablespoons
- Black pepper - to taste
- Feta cheese - 50 grams, crumbled (optional)
Steps
- In a large bowl, mix the flour and salt. Create a well in the center and add the egg and water. Mix until a dough forms. Knead for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.
- Roll out the dough on a floured surface to about 2 mm thick. Cut into strips or squares, approximately 4x4 cm.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute.
- Add the cumin, cinnamon, and black pepper to the skillet, mixing well to combine the spices with the onion mixture. Cook for another 2 minutes.
- Bring a pot of salted water to a boil. Add the pasta pieces and cook for about 3-4 minutes or until they float to the surface. Drain the pasta and add it to the skillet with the onion mixture.
- Toss the pasta gently to coat it with the spices and onion. Stir in the chopped parsley and crumbled feta cheese if using. Cook for an additional 2 minutes to heat through.
- Serve warm, garnished with extra parsley and feta if desired.
