Ingredients
- Ground pork - 300 grams
- Ground beef - 200 grams
- Garlic - 4 cloves, minced
- Dried oregano - 2 teaspoons
- Fennel seeds - 1 teaspoon, crushed
- Cinnamon - 1/2 teaspoon
- Black pepper - 1 teaspoon
- Salt - 1 teaspoon
- Orange zest - 1 tablespoon
- Red wine - 50 ml
- Olive oil - 1 tablespoon
- Natural sausage casings - 1 meter
Steps
- Soak the natural sausage casings in cold water for at least 30 minutes to make them pliable.
- In a large bowl, combine the ground pork, ground beef, minced garlic, oregano, crushed fennel seeds, cinnamon, black pepper, salt, orange zest, and red wine. Mix well until fully incorporated.
- Rinse the soaked sausage casings and fit one end onto a sausage stuffer or funnel, tying a knot at the other end.
- Stuff the casings with the meat mixture, being careful not to overstuff. Tie off the open end securely.
- Using a sharp knife, poke small holes in the sausages to allow air to escape during cooking.
- Preheat a grill or BBQ to medium-high heat. Brush the sausages lightly with olive oil.
- Grill the sausages for about 15-20 minutes, turning occasionally, until they are cooked through and have a nice char.
- Remove from the grill and let rest for a few minutes before slicing or serving whole.
