Ingredients

  • Ground pork - 300 grams
  • Ground beef - 200 grams
  • Garlic - 4 cloves, minced
  • Dried oregano - 2 teaspoons
  • Fennel seeds - 1 teaspoon, crushed
  • Cinnamon - 1/2 teaspoon
  • Black pepper - 1 teaspoon
  • Salt - 1 teaspoon
  • Orange zest - 1 tablespoon
  • Red wine - 50 ml
  • Olive oil - 1 tablespoon
  • Natural sausage casings - 1 meter

Steps

  1. Soak the natural sausage casings in cold water for at least 30 minutes to make them pliable.
  2. In a large bowl, combine the ground pork, ground beef, minced garlic, oregano, crushed fennel seeds, cinnamon, black pepper, salt, orange zest, and red wine. Mix well until fully incorporated.
  3. Rinse the soaked sausage casings and fit one end onto a sausage stuffer or funnel, tying a knot at the other end.
  4. Stuff the casings with the meat mixture, being careful not to overstuff. Tie off the open end securely.
  5. Using a sharp knife, poke small holes in the sausages to allow air to escape during cooking.
  6. Preheat a grill or BBQ to medium-high heat. Brush the sausages lightly with olive oil.
  7. Grill the sausages for about 15-20 minutes, turning occasionally, until they are cooked through and have a nice char.
  8. Remove from the grill and let rest for a few minutes before slicing or serving whole.
