- Ground pork - 400 grams
- Pork fat - 100 grams
- Garlic - 3 cloves, minced
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Sweet paprika - 1 teaspoon
- Black pepper - 1 teaspoon
- Sea salt - 1 teaspoon
- Orange zest - 1 tablespoon
- Red wine vinegar - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Natural hog casings - 2 meters
Steps
- Soak the hog casings in water for at least 30 minutes to soften them.
- In a large bowl, combine ground pork, pork fat, minced garlic, oregano, thyme, paprika, black pepper, sea salt, orange zest, red wine vinegar, and chopped parsley.
- Mix the ingredients thoroughly until well combined. Let the mixture rest in the refrigerator for 30 minutes to enhance the flavors.
- Rinse the hog casings under cold water and then slide one end onto a sausage stuffer.
- Fill the casings with the sausage mixture, being careful not to overstuff. Twist the sausages into 15 cm links.
- Tie off the ends of the casings securely and prick any air bubbles with a needle.
- Preheat a grill over medium heat. Grill the sausages for about 15-20 minutes, turning occasionally, until browned and cooked through.
- Serve hot with your choice of keto-friendly sides.
