Ingredients

  • Ground pork - 400 grams
  • Pork fat - 100 grams
  • Garlic - 3 cloves, minced
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Sweet paprika - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Sea salt - 1 teaspoon
  • Orange zest - 1 tablespoon
  • Red wine vinegar - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Natural hog casings - 2 meters

Steps

  1. Soak the hog casings in water for at least 30 minutes to soften them.
  2. In a large bowl, combine ground pork, pork fat, minced garlic, oregano, thyme, paprika, black pepper, sea salt, orange zest, red wine vinegar, and chopped parsley.
  3. Mix the ingredients thoroughly until well combined. Let the mixture rest in the refrigerator for 30 minutes to enhance the flavors.
  4. Rinse the hog casings under cold water and then slide one end onto a sausage stuffer.
  5. Fill the casings with the sausage mixture, being careful not to overstuff. Twist the sausages into 15 cm links.
  6. Tie off the ends of the casings securely and prick any air bubbles with a needle.
  7. Preheat a grill over medium heat. Grill the sausages for about 15-20 minutes, turning occasionally, until browned and cooked through.
  8. Serve hot with your choice of keto-friendly sides.
