Ingredients
- Pork shoulder - 300 grams, minced
- Garlic - 2 cloves, minced
- Dried oregano - 1 teaspoon
- Fennel seeds - 1 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Sea salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Zest of 1 orange
- Olive oil - 1 tablespoon
- Mixed salad greens - 100 grams
- Tomato - 1 medium, sliced
- Red onion - 1 small, thinly sliced
Steps
- In a mixing bowl, combine the minced pork shoulder, minced garlic, dried oregano, fennel seeds, chopped parsley, sea salt, black pepper, and orange zest. Mix well until all ingredients are evenly incorporated.
- Divide the mixture into two equal portions and shape each portion into a patty, about 2 cm thick.
- Heat the olive oil in a skillet over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side, or until they are browned and cooked through (internal temperature should reach 70°C).
- While the patties are cooking, prepare the salad by combining the mixed greens, sliced tomato, and red onion in a bowl. Toss gently.
- Once the patties are cooked, remove them from the skillet and let them rest for a couple of minutes.
- To serve, place each patty on a bed of the prepared salad. Optionally, drizzle with extra olive oil and lemon juice before enjoying.
