Ingredients

  • Pork shoulder - 300 grams, minced
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Fennel seeds - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Sea salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Zest of 1 orange
  • Olive oil - 1 tablespoon
  • Mixed salad greens - 100 grams
  • Tomato - 1 medium, sliced
  • Red onion - 1 small, thinly sliced

Steps

  1. In a mixing bowl, combine the minced pork shoulder, minced garlic, dried oregano, fennel seeds, chopped parsley, sea salt, black pepper, and orange zest. Mix well until all ingredients are evenly incorporated.
  2. Divide the mixture into two equal portions and shape each portion into a patty, about 2 cm thick.
  3. Heat the olive oil in a skillet over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side, or until they are browned and cooked through (internal temperature should reach 70°C).
  4. While the patties are cooking, prepare the salad by combining the mixed greens, sliced tomato, and red onion in a bowl. Toss gently.
  5. Once the patties are cooked, remove them from the skillet and let them rest for a couple of minutes.
  6. To serve, place each patty on a bed of the prepared salad. Optionally, drizzle with extra olive oil and lemon juice before enjoying.
