Lobster with Pasta

Ingredients
- Lobster tails - 2 (about 250g each)
- Gluten-free pasta (e.g. rice pasta) - 150g
- Olive oil - 3 tablespoons
- Garlic - 3 cloves, minced
- Cherry tomatoes - 200g, halved
- Fresh basil - 1/4 cup, chopped
- Lemon juice - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/2 teaspoon (optional)
- Parmesan cheese - 30g, grated (optional, for serving)
Steps
- Bring a large pot of salted water to a boil. Add the gluten-free pasta and cook according to package instructions until al dente. Drain and set aside.
- While the pasta is cooking, prepare the lobster tails by cutting them in half lengthwise and removing any tomalley (green substance).
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Place the lobster halves in the skillet, cut side down, and cook for about 4-5 minutes. Flip the lobster and add the halved cherry tomatoes.
- Squeeze the lemon juice over the lobster and tomatoes, and season with salt, black pepper, and red pepper flakes if using. Cook for another 4-5 minutes until the lobster is cooked through.
- Add the cooked gluten-free pasta to the skillet, tossing gently to combine with the lobster and tomatoes. Stir in the chopped basil and adjust seasoning if necessary.
- Serve immediately, garnished with grated Parmesan cheese if desired.
