- Lobster tail - 2 (approx. 200g each)
- Orzo (gluten-free) - 100g
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cherry tomatoes - 150g, halved
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Water - 500ml
Steps
- Bring 500ml of water to a boil in a medium saucepan. Add the orzo and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
- While the orzo is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the halved cherry tomatoes to the skillet and cook for an additional 3-4 minutes until they soften.
- Season the lobster tails with salt and black pepper. Place them in the skillet, shell side down, and cook for about 5-6 minutes until the lobster is opaque and cooked through. Flip the lobster tails halfway through the cooking time.
- Once the lobster is cooked, add the cooked orzo, lemon juice, and chopped parsley to the skillet. Toss everything together until well combined and heated through.
- Serve immediately, garnished with extra parsley and lemon wedges if desired.
