Ingredients

  • Lobster tails - 2 (about 200g each)
  • Fennel bulb - 1 medium (about 200g)
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Fresh dill - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • White wine - 100 ml
  • Vegetable broth - 100 ml

Steps

  1. Begin by preheating your oven to 200°C (390°F).
  2. Cut the fennel bulb in half, remove the core, and slice it thinly.
  3. In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced fennel and sauté for about 5-7 minutes until it begins to soften.
  4. Add the minced garlic and cook for another minute, stirring frequently to avoid burning.
  5. Season the fennel with salt and black pepper, then pour in the white wine and vegetable broth. Bring to a simmer.
  6. While the fennel is cooking, prepare the lobster tails by cutting the shells down the middle and gently pulling the meat out, leaving it attached at one end.
  7. Place the lobster tails on top of the fennel mixture in the skillet, drizzle with lemon juice, and sprinkle with fresh dill.
  8. Drizzle the remaining tablespoon of olive oil over the lobster tails, and season with salt and pepper.
  9. Transfer the skillet to the preheated oven and bake for about 10-12 minutes, or until the lobster is cooked through and opaque.
  10. Remove from the oven, let rest for a minute, and serve hot, garnished with additional dill and lemon wedges if desired.
