- Lobster tails - 2 (about 200g each)
- Fennel bulb - 1 medium (about 200g)
- Olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 2 tablespoons
- Fresh dill - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- White wine - 100 ml
- Vegetable broth - 100 ml
Steps
- Begin by preheating your oven to 200°C (390°F).
- Cut the fennel bulb in half, remove the core, and slice it thinly.
- In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced fennel and sauté for about 5-7 minutes until it begins to soften.
- Add the minced garlic and cook for another minute, stirring frequently to avoid burning.
- Season the fennel with salt and black pepper, then pour in the white wine and vegetable broth. Bring to a simmer.
- While the fennel is cooking, prepare the lobster tails by cutting the shells down the middle and gently pulling the meat out, leaving it attached at one end.
- Place the lobster tails on top of the fennel mixture in the skillet, drizzle with lemon juice, and sprinkle with fresh dill.
- Drizzle the remaining tablespoon of olive oil over the lobster tails, and season with salt and pepper.
- Transfer the skillet to the preheated oven and bake for about 10-12 minutes, or until the lobster is cooked through and opaque.
- Remove from the oven, let rest for a minute, and serve hot, garnished with additional dill and lemon wedges if desired.
