- Green lentils - 100 grams
- Feta cheese - 75 grams, crumbled
- Cherry tomatoes - 100 grams, halved
- Cucumber - 1 medium, diced
- Red onion - 1/4 medium, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the green lentils under cold water and place them in a pot with 300 ml of water. Bring to a boil, then reduce the heat and simmer for about 20 minutes or until tender. Drain and let cool.
- While the lentils are cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber, and finely chop the red onion and parsley.
- In a large bowl, combine the cooled lentils, cherry tomatoes, cucumber, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to create a dressing.
- Pour the dressing over the lentil salad and gently toss to combine. Add the crumbled feta cheese on top.
- Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
