Ingredients

  • Green lentils - 100 grams
  • Feta cheese - 75 grams, crumbled
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 medium, diced
  • Red onion - 1/4 medium, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the green lentils under cold water and place them in a pot with 300 ml of water. Bring to a boil, then reduce the heat and simmer for about 20 minutes or until tender. Drain and let cool.
  2. While the lentils are cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber, and finely chop the red onion and parsley.
  3. In a large bowl, combine the cooled lentils, cherry tomatoes, cucumber, red onion, and parsley.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to create a dressing.
  5. Pour the dressing over the lentil salad and gently toss to combine. Add the crumbled feta cheese on top.
  6. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
