- Green lentils - 100 grams
- Cucumber - 100 grams, diced
- Cherry tomatoes - 100 grams, halved
- Red onion - 30 grams, finely chopped
- Kalamata olives - 30 grams, pitted and sliced
- Feta cheese - 50 grams, crumbled
- Olive oil - 2 tablespoons
- Red wine vinegar - 1 tablespoon
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the green lentils under cold water and then place them in a pot with 300 ml of water. Bring to a boil, reduce heat, and simmer for about 20 minutes or until tender. Drain and let cool.
- While the lentils are cooking, prepare the vegetables. Dice the cucumber, halve the cherry tomatoes, and finely chop the red onion.
- In a large mixing bowl, combine the cooled lentils, diced cucumber, halved cherry tomatoes, chopped red onion, sliced Kalamata olives, and crumbled feta cheese.
- In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper to create the dressing.
- Pour the dressing over the lentil mixture and toss gently to combine.
- Garnish with fresh parsley before serving.
