Ingredients

  • Green lentils - 100 grams
  • Cucumber - 100 grams, diced
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 30 grams, finely chopped
  • Kalamata olives - 30 grams, pitted and sliced
  • Feta cheese - 50 grams, crumbled
  • Olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the green lentils under cold water and then place them in a pot with 300 ml of water. Bring to a boil, reduce heat, and simmer for about 20 minutes or until tender. Drain and let cool.
  2. While the lentils are cooking, prepare the vegetables. Dice the cucumber, halve the cherry tomatoes, and finely chop the red onion.
  3. In a large mixing bowl, combine the cooled lentils, diced cucumber, halved cherry tomatoes, chopped red onion, sliced Kalamata olives, and crumbled feta cheese.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper to create the dressing.
  5. Pour the dressing over the lentil mixture and toss gently to combine.
  6. Garnish with fresh parsley before serving.
