Ingredients

  • Risoni (orzo pasta) - 150 grams
  • Green or brown lentils - 100 grams, rinsed
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Tomato paste - 2 tablespoons
  • Vegetable broth - 500 ml
  • Dried oregano - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.
  2. Add the rinsed lentils and tomato paste to the pot, stirring to combine. Cook for another 2 minutes.
  3. Pour in the vegetable broth, and add the dried oregano. Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes, or until the lentils are tender.
  4. While the lentils are cooking, bring a separate pot of salted water to a boil. Add the risoni and cook according to package instructions, usually about 8-10 minutes, until al dente. Drain and set aside.
  5. Once the lentils are cooked, season the mixture with salt, black pepper, and lemon juice. Stir in the cooked risoni and fresh parsley, mixing well.
  6. Serve hot, garnished with additional parsley if desired.
