- Long-grain rice - 1 cup (200g)
- Green or brown lentils - 1/2 cup (100g)
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Vegetable broth - 2 cups (500ml)
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the lentils under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and diced carrot, and sauté for about 5 minutes until softened.
- Add the minced garlic, cumin, cinnamon, salt, and black pepper to the pot. Stir and cook for another 1-2 minutes until fragrant.
- Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes until the lentils are tender but not mushy.
- Stir in the rice, cover the pot again, and cook for an additional 15-20 minutes, or until the rice is fully cooked and has absorbed all the liquid.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the pilaf with a fork and garnish with fresh parsley before serving.
