Ingredients

  • Long-grain rice - 1 cup (200g)
  • Green or brown lentils - 1/2 cup (100g)
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Vegetable broth - 2 cups (500ml)
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and diced carrot, and sauté for about 5 minutes until softened.
  3. Add the minced garlic, cumin, cinnamon, salt, and black pepper to the pot. Stir and cook for another 1-2 minutes until fragrant.
  4. Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes until the lentils are tender but not mushy.
  5. Stir in the rice, cover the pot again, and cook for an additional 15-20 minutes, or until the rice is fully cooked and has absorbed all the liquid.
  6. Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the pilaf with a fork and garnish with fresh parsley before serving.
