Ingredients
- Green lentils - 100 grams
- Cauliflower rice - 200 grams
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Vegetable broth - 250 ml
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the green lentils under cold water and drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent.
- Add the rinsed lentils to the saucepan, stirring for a minute to combine with the onion and garlic.
- Pour in the vegetable broth, add the dried oregano, salt, and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes or until the lentils are tender.
- While the lentils are cooking, prepare the cauliflower rice in a separate pan. Heat a little olive oil over medium heat and sauté the cauliflower rice for about 5-7 minutes until tender.
- Once the lentils are cooked and the liquid has mostly evaporated, combine them with the cauliflower rice in the saucepan. Stir well to mix.
- Remove from heat and garnish with fresh parsley before serving.
