Ingredients

  • Green lentils - 100 grams
  • Cauliflower rice - 200 grams
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Vegetable broth - 250 ml
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the green lentils under cold water and drain.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent.
  3. Add the rinsed lentils to the saucepan, stirring for a minute to combine with the onion and garlic.
  4. Pour in the vegetable broth, add the dried oregano, salt, and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes or until the lentils are tender.
  5. While the lentils are cooking, prepare the cauliflower rice in a separate pan. Heat a little olive oil over medium heat and sauté the cauliflower rice for about 5-7 minutes until tender.
  6. Once the lentils are cooked and the liquid has mostly evaporated, combine them with the cauliflower rice in the saucepan. Stir well to mix.
  7. Remove from heat and garnish with fresh parsley before serving.
