Ingredients

  • Cooked lentils - 1 cup
  • Whole wheat pizza dough - 1 medium-sized (about 250g)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red onion - 1 small, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Bell pepper - 1 small, diced
  • Kalamata olives - 1/4 cup, pitted and sliced
  • Spinach - 1 cup, fresh
  • Oregano - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the minced garlic and red onion until translucent, about 3-4 minutes.
  3. Add the cherry tomatoes, bell pepper, spinach, oregano, salt, and pepper to the skillet, cooking for an additional 5 minutes until the vegetables are slightly softened.
  4. Roll out the whole wheat pizza dough on a floured surface to your desired thickness.
  5. Transfer the rolled dough onto a baking sheet lined with parchment paper.
  6. Spread the cooked lentils evenly over the pizza base as a sauce layer.
  7. Top the lentils with the sautéed vegetable mixture, spreading it evenly across the surface.
  8. Sprinkle the sliced Kalamata olives on top.
  9. Drizzle the remaining tablespoon of olive oil over the pizza.
  10. Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown.
  11. Remove from the oven and let cool for a minute before garnishing with fresh parsley.
  12. Slice and serve warm.
