- Cooked lentils - 1 cup
- Whole wheat pizza dough - 1 medium-sized (about 250g)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red onion - 1 small, thinly sliced
- Cherry tomatoes - 1 cup, halved
- Bell pepper - 1 small, diced
- Kalamata olives - 1/4 cup, pitted and sliced
- Spinach - 1 cup, fresh
- Oregano - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 220°C (425°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the minced garlic and red onion until translucent, about 3-4 minutes.
- Add the cherry tomatoes, bell pepper, spinach, oregano, salt, and pepper to the skillet, cooking for an additional 5 minutes until the vegetables are slightly softened.
- Roll out the whole wheat pizza dough on a floured surface to your desired thickness.
- Transfer the rolled dough onto a baking sheet lined with parchment paper.
- Spread the cooked lentils evenly over the pizza base as a sauce layer.
- Top the lentils with the sautéed vegetable mixture, spreading it evenly across the surface.
- Sprinkle the sliced Kalamata olives on top.
- Drizzle the remaining tablespoon of olive oil over the pizza.
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown.
- Remove from the oven and let cool for a minute before garnishing with fresh parsley.
- Slice and serve warm.
