- Brown rice - 1 cup
- Green or brown lentils - 1/2 cup
- Vegetable broth - 2 cups
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1/2, diced
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the brown rice and lentils under cold water until the water runs clear.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced carrot, and bell pepper, cooking for another 3-4 minutes until the vegetables are softened.
- Add the rinsed lentils, brown rice, vegetable broth, oregano, thyme, salt, and black pepper to the saucepan. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 25-30 minutes, or until the rice and lentils are cooked and have absorbed the liquid.
- Remove from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the pilaf with a fork, garnish with fresh parsley, and serve warm.
