- Lentil pasta - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Cherry tomatoes - 200 grams, halved
- Spinach - 100 grams, fresh
- Feta cheese - 100 grams, crumbled
- Kalamata olives - 50 grams, pitted and sliced
- Lemon juice - 1 tablespoon
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Bring a large pot of salted water to a boil, then add the lentil pasta and cook according to package instructions, usually about 7-9 minutes until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they begin to soften.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Add the cooked lentil pasta to the skillet and toss to combine with the vegetables.
- Sprinkle in the crumbled feta cheese, sliced olives, lemon juice, dried oregano, salt, and black pepper. Mix well and heat through for another 2-3 minutes.
- Remove from heat, garnish with fresh parsley, and serve immediately.
