Ingredients

  • Lentil pasta - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Spinach - 100 grams, fresh
  • Feta cheese - 100 grams, crumbled
  • Kalamata olives - 50 grams, pitted and sliced
  • Lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Bring a large pot of salted water to a boil, then add the lentil pasta and cook according to package instructions, usually about 7-9 minutes until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they begin to soften.
  4. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  5. Add the cooked lentil pasta to the skillet and toss to combine with the vegetables.
  6. Sprinkle in the crumbled feta cheese, sliced olives, lemon juice, dried oregano, salt, and black pepper. Mix well and heat through for another 2-3 minutes.
  7. Remove from heat, garnish with fresh parsley, and serve immediately.
