Ingredients
- Cooked green lentils - 200 grams
- Almond flour - 50 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Egg - 1 large
- Feta cheese - 50 grams, crumbled
- Olive oil - 2 tablespoons (for frying)
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
Steps
- In a mixing bowl, combine the cooked lentils, almond flour, chopped onion, minced garlic, parsley, dill, egg, feta cheese, salt, and black pepper. Mix until well combined.
- Form the mixture into small patties (about 5 cm in diameter).
- Heat olive oil in a frying pan over medium heat. Once hot, add the lentil patties in batches, cooking for about 4-5 minutes on each side or until golden brown.
- Remove the keftedes from the pan and place them on a paper towel to drain excess oil.
- Serve warm with a drizzle of lemon juice and a side of fresh herb salad.
