Ingredients

  • Cooked green lentils - 200 grams
  • Almond flour - 50 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Egg - 1 large
  • Feta cheese - 50 grams, crumbled
  • Olive oil - 2 tablespoons (for frying)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a mixing bowl, combine the cooked lentils, almond flour, chopped onion, minced garlic, parsley, dill, egg, feta cheese, salt, and black pepper. Mix until well combined.
  2. Form the mixture into small patties (about 5 cm in diameter).
  3. Heat olive oil in a frying pan over medium heat. Once hot, add the lentil patties in batches, cooking for about 4-5 minutes on each side or until golden brown.
  4. Remove the keftedes from the pan and place them on a paper towel to drain excess oil.
  5. Serve warm with a drizzle of lemon juice and a side of fresh herb salad.
