Ingredients

  • Whole wheat pasta - 150 grams
  • Brown lentils - 100 grams, rinsed
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Tomato paste - 2 tablespoons
  • Vegetable broth - 500 ml
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - a handful, chopped for garnish

Steps

  1. In a pot, bring salted water to a boil and cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, diced carrot, and diced celery, cooking for another 5 minutes until softened.
  4. Add the rinsed lentils and vegetable broth to the skillet, along with the tomato paste, oregano, thyme, salt, and pepper. Bring to a simmer.
  5. Cover and cook for about 15-20 minutes, or until the lentils are tender and the mixture has thickened slightly.
  6. Once the lentils are cooked, combine them with the drained pasta in the skillet, stirring well to coat.
  7. Serve hot, garnished with fresh parsley.
