Ingredients
- Whole wheat pasta - 150 grams
- Brown lentils - 100 grams, rinsed
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Tomato paste - 2 tablespoons
- Vegetable broth - 500 ml
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - a handful, chopped for garnish
Steps
- In a pot, bring salted water to a boil and cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced carrot, and diced celery, cooking for another 5 minutes until softened.
- Add the rinsed lentils and vegetable broth to the skillet, along with the tomato paste, oregano, thyme, salt, and pepper. Bring to a simmer.
- Cover and cook for about 15-20 minutes, or until the lentils are tender and the mixture has thickened slightly.
- Once the lentils are cooked, combine them with the drained pasta in the skillet, stirring well to coat.
- Serve hot, garnished with fresh parsley.
