Ingredients
- Brown lentils - 200 grams
- Red onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 30 grams, chopped
- Fresh mint - 10 grams, chopped
- Feta cheese - 50 grams, crumbled
- Egg - 1 large
- Whole wheat breadcrumbs - 50 grams
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Rinse the lentils under cold water and cook them in a pot with 500 ml of water for about 20 minutes or until tender. Drain and let cool slightly.
- In a large bowl, combine the cooked lentils, chopped red onion, minced garlic, chopped parsley, chopped mint, crumbled feta cheese, egg, breadcrumbs, lemon juice, salt, black pepper, paprika, and cumin. Mix well until all ingredients are combined.
- Shape the mixture into 4 patties and refrigerate for 10 minutes to firm up.
- Heat olive oil in a non-stick skillet over medium heat. Cook the lentil patties for about 5-6 minutes on each side or until golden brown.
- Serve the lentil burgers on whole wheat buns with your choice of toppings like lettuce, tomato, and tzatziki sauce.
