Lentil Burger

- Brown lentils - 150 grams (1 cup)
- Red onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 30 grams, chopped (1/2 cup)
- Fresh mint - 15 grams, chopped (1/4 cup)
- Bread crumbs - 50 grams (1/2 cup)
- Olive oil - 30 ml (2 tablespoons)
- Ground cumin - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole grain burger buns - 2
- Tomato - 1 medium, sliced
- Cucumber - 1/2, sliced
- Lettuce leaves - 2
Steps
- Rinse the lentils under cold water, then cook them in a pot with 500 ml of water for about 20-25 minutes until tender. Drain and let cool slightly.
- In a large mixing bowl, combine the cooked lentils, chopped red onion, minced garlic, parsley, mint, bread crumbs, olive oil, cumin, oregano, salt, and black pepper. Mix well until everything is combined.
- Using your hands, form the lentil mixture into two patties of equal size. If the mixture is too wet, add a bit more bread crumbs.
- Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Cook the patties for about 5-6 minutes on each side until they are golden brown and crispy.
- While the patties are cooking, lightly toast the burger buns in a separate pan if desired.
- Assemble the burgers by placing each lentil patty on a bun, topping with sliced tomatoes, cucumber, and lettuce. Serve immediately.
