Lentil Burger

Ingredients

  • Brown lentils - 150 grams (1 cup)
  • Red onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, chopped (1/2 cup)
  • Fresh mint - 15 grams, chopped (1/4 cup)
  • Bread crumbs - 50 grams (1/2 cup)
  • Olive oil - 30 ml (2 tablespoons)
  • Ground cumin - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole grain burger buns - 2
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2, sliced
  • Lettuce leaves - 2

Steps

  1. Rinse the lentils under cold water, then cook them in a pot with 500 ml of water for about 20-25 minutes until tender. Drain and let cool slightly.
  2. In a large mixing bowl, combine the cooked lentils, chopped red onion, minced garlic, parsley, mint, bread crumbs, olive oil, cumin, oregano, salt, and black pepper. Mix well until everything is combined.
  3. Using your hands, form the lentil mixture into two patties of equal size. If the mixture is too wet, add a bit more bread crumbs.
  4. Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Cook the patties for about 5-6 minutes on each side until they are golden brown and crispy.
  5. While the patties are cooking, lightly toast the burger buns in a separate pan if desired.
  6. Assemble the burgers by placing each lentil patty on a bun, topping with sliced tomatoes, cucumber, and lettuce. Serve immediately.
