- Whole wheat pizza dough - 200 grams
- Cooked green or brown lentils - 100 grams
- Feta cheese - 100 grams, crumbled
- Cherry tomatoes - 100 grams, halved
- Red onion - 1 small, thinly sliced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 220°C (430°F).
- Roll out the whole wheat pizza dough on a floured surface to your desired thickness and shape.
- Transfer the rolled dough to a parchment-lined baking sheet.
- In a skillet, heat 1 tablespoon of olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
- Add the cooked lentils, cherry tomatoes, red onion, oregano, salt, and black pepper to the skillet. Cook for 5-7 minutes, stirring occasionally, until the tomatoes soften.
- Spread the lentil mixture evenly over the pizza dough.
- Sprinkle the crumbled feta cheese over the top.
- Drizzle the remaining tablespoon of olive oil over the pizza.
- Bake the pizza in the preheated oven for 12-15 minutes or until the crust is golden and crispy.
- Remove the pizza from the oven and let it cool for a couple of minutes.
- Garnish with chopped fresh parsley before slicing and serving.
