Ingredients

  • Whole wheat pizza dough - 200 grams
  • Cooked green or brown lentils - 100 grams
  • Feta cheese - 100 grams, crumbled
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 1 small, thinly sliced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 220°C (430°F).
  2. Roll out the whole wheat pizza dough on a floured surface to your desired thickness and shape.
  3. Transfer the rolled dough to a parchment-lined baking sheet.
  4. In a skillet, heat 1 tablespoon of olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
  5. Add the cooked lentils, cherry tomatoes, red onion, oregano, salt, and black pepper to the skillet. Cook for 5-7 minutes, stirring occasionally, until the tomatoes soften.
  6. Spread the lentil mixture evenly over the pizza dough.
  7. Sprinkle the crumbled feta cheese over the top.
  8. Drizzle the remaining tablespoon of olive oil over the pizza.
  9. Bake the pizza in the preheated oven for 12-15 minutes or until the crust is golden and crispy.
  10. Remove the pizza from the oven and let it cool for a couple of minutes.
  11. Garnish with chopped fresh parsley before slicing and serving.
