Ingredients

  • Basmati rice - 150 grams
  • Vegetable broth - 300 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  4. Stir in the rinsed rice and toast for 2-3 minutes, stirring frequently to coat the rice with the oil and mix with the onion and garlic.
  5. Pour in the vegetable broth, lemon juice, and lemon zest. Add salt and pepper to taste.
  6. Bring the mixture to a boil, then reduce the heat to low and cover the saucepan. Let it simmer for about 15 minutes, or until the rice is tender and has absorbed the liquid.
  7. Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes to steam.
  8. Fluff the rice with a fork and gently stir in the chopped dill and parsley before serving.
