- Basmati rice - 150 grams
- Vegetable broth - 300 ml
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Lemon juice - 2 tablespoons
- Lemon zest - 1 teaspoon
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
- Stir in the rinsed rice and toast for 2-3 minutes, stirring frequently to coat the rice with the oil and mix with the onion and garlic.
- Pour in the vegetable broth, lemon juice, and lemon zest. Add salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low and cover the saucepan. Let it simmer for about 15 minutes, or until the rice is tender and has absorbed the liquid.
- Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes to steam.
- Fluff the rice with a fork and gently stir in the chopped dill and parsley before serving.
