Ingredients

  • Chicken breast - 200 grams
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Chicken broth - 500 ml
  • Lemon juice - 2 tablespoons
  • Fresh dill - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Spinach - 100 grams, fresh

Steps

  1. Heat the olive oil in a pot over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté until softened, about 5 minutes.
  2. Cut the chicken breast into bite-sized pieces and add them to the pot. Cook for an additional 5 minutes until the chicken is no longer pink.
  3. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  4. Stir in the lemon juice, fresh dill, salt, and black pepper. Add the spinach and cook until just wilted, about 2 minutes.
  5. Taste and adjust seasoning if necessary. Serve hot, garnished with additional dill if desired.
