- Chicken breast - 200 grams
- Olive oil - 1 tablespoon
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Chicken broth - 500 ml
- Lemon juice - 2 tablespoons
- Fresh dill - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Spinach - 100 grams, fresh
Steps
- Heat the olive oil in a pot over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté until softened, about 5 minutes.
- Cut the chicken breast into bite-sized pieces and add them to the pot. Cook for an additional 5 minutes until the chicken is no longer pink.
- Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
- Stir in the lemon juice, fresh dill, salt, and black pepper. Add the spinach and cook until just wilted, about 2 minutes.
- Taste and adjust seasoning if necessary. Serve hot, garnished with additional dill if desired.
