- Chicken breast - 300 grams, cut into 2.5 cm cubes
- Lemon juice - 60 ml (about 1 large lemon)
- Olive oil - 30 ml
- Garlic - 2 cloves, minced
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Wooden skewers - 4, soaked in water for 30 minutes
Steps
- In a mixing bowl, combine the lemon juice, olive oil, minced garlic, dried oregano, salt, and black pepper to create the marinade.
- Add the chicken cubes to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 15 minutes, or up to 2 hours for deeper flavor.
- Preheat the grill or a grill pan over medium-high heat.
- Thread the marinated chicken onto the soaked wooden skewers, leaving a little space between each piece.
- Place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
- Once cooked, remove the skewers from the grill and let them rest for a couple of minutes.
- Garnish with fresh chopped parsley before serving.
