Ingredients

  • Chicken breast - 300 grams, cut into 2.5 cm cubes
  • Lemon juice - 60 ml (about 1 large lemon)
  • Olive oil - 30 ml
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Wooden skewers - 4, soaked in water for 30 minutes

Steps

  1. In a mixing bowl, combine the lemon juice, olive oil, minced garlic, dried oregano, salt, and black pepper to create the marinade.
  2. Add the chicken cubes to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 15 minutes, or up to 2 hours for deeper flavor.
  3. Preheat the grill or a grill pan over medium-high heat.
  4. Thread the marinated chicken onto the soaked wooden skewers, leaving a little space between each piece.
  5. Place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
  6. Once cooked, remove the skewers from the grill and let them rest for a couple of minutes.
  7. Garnish with fresh chopped parsley before serving.
