- Lamb shoulder, boneless - 300 grams
- Orzo pasta - 150 grams
- Olive oil - 2 tablespoons
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Diced tomatoes (canned) - 400 grams
- Vegetable broth - 500 ml
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Feta cheese, crumbled - 50 grams
- Fresh parsley, chopped - 2 tablespoons
- Lemon wedges - for serving
Steps
- Preheat your oven to 180°C (350°F).
- In a large oven-safe pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Cut the lamb into bite-sized pieces and add it to the pan. Brown the lamb on all sides for about 5-7 minutes.
- Stir in the canned tomatoes, vegetable broth, dried oregano, dried thyme, salt, and black pepper. Bring the mixture to a simmer.
- Add the orzo pasta to the pan, stirring well to combine. Ensure the pasta is submerged in the liquid.
- Cover the pan with a lid or aluminum foil and transfer it to the preheated oven. Bake for 30 minutes.
- After 30 minutes, remove the cover and bake for an additional 10-15 minutes, or until the orzo is tender and the liquid is absorbed.
- Once done, remove from the oven and let it cool for a few minutes.
- Serve topped with crumbled feta cheese and chopped parsley, with lemon wedges on the side.
