  • Lamb shoulder, boneless - 300 grams
  • Orzo pasta - 150 grams
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Diced tomatoes (canned) - 400 grams
  • Vegetable broth - 500 ml
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Feta cheese, crumbled - 50 grams
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon wedges - for serving

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large oven-safe pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Cut the lamb into bite-sized pieces and add it to the pan. Brown the lamb on all sides for about 5-7 minutes.
  5. Stir in the canned tomatoes, vegetable broth, dried oregano, dried thyme, salt, and black pepper. Bring the mixture to a simmer.
  6. Add the orzo pasta to the pan, stirring well to combine. Ensure the pasta is submerged in the liquid.
  7. Cover the pan with a lid or aluminum foil and transfer it to the preheated oven. Bake for 30 minutes.
  8. After 30 minutes, remove the cover and bake for an additional 10-15 minutes, or until the orzo is tender and the liquid is absorbed.
  9. Once done, remove from the oven and let it cool for a few minutes.
  10. Serve topped with crumbled feta cheese and chopped parsley, with lemon wedges on the side.
