Ingredients

  • Lamb shoulder - 500 grams, cut into chunks
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Lemon juice - 2 tablespoons
  • Dried oregano - 2 teaspoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Potatoes - 300 grams, cut into wedges
  • Onion - 1 medium, sliced
  • Carrots - 2 medium, sliced
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a large mixing bowl, combine the lamb chunks with olive oil, minced garlic, lemon juice, dried oregano, salt, and black pepper. Mix well to coat the lamb evenly.
  3. Layer the onion, carrots, and potato wedges at the bottom of a large baking dish or Dutch oven. Place the marinated lamb on top.
  4. Cover the dish tightly with parchment paper and then with aluminum foil to ensure no steam escapes.
  5. Bake in the preheated oven for approximately 2 hours until the lamb is tender and the vegetables are cooked through.
  6. Remove from the oven, carefully take off the foil and parchment, and sprinkle the crumbled feta cheese over the top.
  7. Return to the oven for an additional 10 minutes to melt the cheese slightly.
  8. Garnish with fresh parsley before serving.
