Ingredients
- Lamb shoulder - 500 grams, cut into chunks
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Lemon juice - 2 tablespoons
- Dried oregano - 2 teaspoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Potatoes - 300 grams, cut into wedges
- Onion - 1 medium, sliced
- Carrots - 2 medium, sliced
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 160°C (320°F).
- In a large mixing bowl, combine the lamb chunks with olive oil, minced garlic, lemon juice, dried oregano, salt, and black pepper. Mix well to coat the lamb evenly.
- Layer the onion, carrots, and potato wedges at the bottom of a large baking dish or Dutch oven. Place the marinated lamb on top.
- Cover the dish tightly with parchment paper and then with aluminum foil to ensure no steam escapes.
- Bake in the preheated oven for approximately 2 hours until the lamb is tender and the vegetables are cooked through.
- Remove from the oven, carefully take off the foil and parchment, and sprinkle the crumbled feta cheese over the top.
- Return to the oven for an additional 10 minutes to melt the cheese slightly.
- Garnish with fresh parsley before serving.
