Ingredients

  • Lamb shoulder - 300 grams, diced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Greek yogurt - 100 grams
  • Lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Romaine lettuce - 4 large leaves
  • Tomato - 1 medium, diced
  • Cucumber - 1/2 medium, diced
  • Red onion - 1/4 small, thinly sliced
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a bowl, combine diced lamb, olive oil, minced garlic, dried oregano, ground cumin, salt, and black pepper. Mix well and let marinate for 15 minutes.
  2. Heat a skillet over medium-high heat. Add the marinated lamb and cook for about 10-12 minutes, until browned and cooked through.
  3. While the lamb is cooking, prepare the tzatziki sauce by mixing Greek yogurt, lemon juice, salt, and chopped parsley in a separate bowl.
  4. Once the lamb is cooked, remove from heat and let it rest for a couple of minutes.
  5. To assemble the wraps, take a Romaine lettuce leaf and place a portion of the cooked lamb on it. Top with diced tomato, cucumber, red onion, and a generous dollop of tzatziki sauce.
  6. Wrap the lettuce around the filling like a taco, secure with a toothpick if necessary, and serve immediately.
