- Lamb shoulder - 300 grams, diced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Greek yogurt - 100 grams
- Lemon juice - 1 tablespoon
- Dried oregano - 1 teaspoon
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Romaine lettuce - 4 large leaves
- Tomato - 1 medium, diced
- Cucumber - 1/2 medium, diced
- Red onion - 1/4 small, thinly sliced
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a bowl, combine diced lamb, olive oil, minced garlic, dried oregano, ground cumin, salt, and black pepper. Mix well and let marinate for 15 minutes.
- Heat a skillet over medium-high heat. Add the marinated lamb and cook for about 10-12 minutes, until browned and cooked through.
- While the lamb is cooking, prepare the tzatziki sauce by mixing Greek yogurt, lemon juice, salt, and chopped parsley in a separate bowl.
- Once the lamb is cooked, remove from heat and let it rest for a couple of minutes.
- To assemble the wraps, take a Romaine lettuce leaf and place a portion of the cooked lamb on it. Top with diced tomato, cucumber, red onion, and a generous dollop of tzatziki sauce.
- Wrap the lettuce around the filling like a taco, secure with a toothpick if necessary, and serve immediately.
