Ingredients

  • Almond flour - 1 cup
  • Grated mozzarella cheese - 1 cup
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Ground lamb - 200 grams
  • Fresh mint leaves - 1/4 cup, chopped
  • Red onion - 1/2, thinly sliced
  • Feta cheese - 50 grams, crumbled
  • Garlic - 2 cloves, minced
  • Oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100 grams, halved

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a mixing bowl, combine the almond flour, grated mozzarella cheese, egg, and olive oil. Mix until a dough forms.
  3. Spread the dough onto a parchment-lined baking sheet, shaping it into a round pizza crust.
  4. Bake the crust in the preheated oven for 10 minutes or until lightly golden.
  5. In a skillet over medium heat, cook the ground lamb until browned, about 5-7 minutes. Drain excess fat.
  6. Add minced garlic, oregano, salt, and black pepper to the cooked lamb, and cook for an additional 2 minutes.
  7. Remove the skillet from heat and stir in chopped mint leaves.
  8. Once the crust is done, remove it from the oven and spread the lamb mixture evenly over the top.
  9. Scatter sliced red onion, cherry tomatoes, and crumbled feta cheese over the lamb.
  10. Return the pizza to the oven and bake for an additional 8-10 minutes, or until the toppings are heated through and the cheese is melted.
  11. Remove from the oven, let cool slightly, and garnish with additional fresh mint if desired. Slice and serve.
