Ingredients

  • Almond flour - 1 cup
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Water - 2 tablespoons
  • Ground lamb - 200 grams
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100 grams, halved
  • Feta cheese - 75 grams, crumbled
  • Fresh spinach - 50 grams
  • Red onion - 1/4, thinly sliced
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine almond flour, egg, olive oil, and water to form a dough. Mix until well combined.
  3. Press the dough onto a parchment-lined baking sheet into a round pizza shape, about 1/4 inch thick.
  4. Bake the crust in the preheated oven for 10 minutes until slightly golden.
  5. While the crust is baking, heat a pan over medium heat and add the ground lamb. Cook for about 5 minutes until browned.
  6. Add minced garlic, dried oregano, salt, and black pepper to the lamb. Stir and cook for an additional 2-3 minutes.
  7. Remove the crust from the oven and spread the cooked lamb mixture evenly over it.
  8. Top with halved cherry tomatoes, crumbled feta, fresh spinach, and red onion slices.
  9. Return the pizza to the oven and bake for an additional 10-12 minutes until the toppings are heated and the cheese is slightly melted.
