Ingredients

  • Cauliflower - 300 grams
  • Ground lamb - 250 grams
  • Feta cheese - 100 grams, crumbled
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red onion - 1 small, diced
  • Cherry tomatoes - 150 grams, halved
  • Oregano - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the cauliflower into florets and steam until tender, about 10 minutes. Allow to cool slightly.
  3. In a food processor, blend the steamed cauliflower until it resembles rice. Transfer to a clean kitchen towel and squeeze out excess moisture.
  4. In a mixing bowl, combine the cauliflower, egg, 1 tablespoon of olive oil, salt, and pepper. Mix well to form a dough.
  5. Press the cauliflower mixture into a round pizza crust shape on a parchment-lined baking sheet. Bake in the preheated oven for 15 minutes until golden.
  6. While the crust is baking, heat the remaining olive oil in a skillet over medium heat. Add the diced red onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  7. Add the ground lamb and oregano to the skillet, cooking until browned and fully cooked, about 5-7 minutes. Season with salt and pepper.
  8. Remove the crust from the oven, and spread the cooked lamb mixture evenly over the top. Scatter the halved cherry tomatoes and crumbled feta cheese over the lamb.
  9. Return the bake to the oven and cook for an additional 10 minutes until the cheese is slightly melted.
  10. Once done, remove from the oven, garnish with fresh parsley, slice, and serve hot.
