- Cauliflower - 300 grams
- Ground lamb - 250 grams
- Feta cheese - 100 grams, crumbled
- Egg - 1 large
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red onion - 1 small, diced
- Cherry tomatoes - 150 grams, halved
- Oregano - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- Cut the cauliflower into florets and steam until tender, about 10 minutes. Allow to cool slightly.
- In a food processor, blend the steamed cauliflower until it resembles rice. Transfer to a clean kitchen towel and squeeze out excess moisture.
- In a mixing bowl, combine the cauliflower, egg, 1 tablespoon of olive oil, salt, and pepper. Mix well to form a dough.
- Press the cauliflower mixture into a round pizza crust shape on a parchment-lined baking sheet. Bake in the preheated oven for 15 minutes until golden.
- While the crust is baking, heat the remaining olive oil in a skillet over medium heat. Add the diced red onion and minced garlic, sautéing until translucent, about 3-4 minutes.
- Add the ground lamb and oregano to the skillet, cooking until browned and fully cooked, about 5-7 minutes. Season with salt and pepper.
- Remove the crust from the oven, and spread the cooked lamb mixture evenly over the top. Scatter the halved cherry tomatoes and crumbled feta cheese over the lamb.
- Return the bake to the oven and cook for an additional 10 minutes until the cheese is slightly melted.
- Once done, remove from the oven, garnish with fresh parsley, slice, and serve hot.
