Ingredients

  • Long grain rice - 150 grams
  • Cabbage (green or Savoy) - 300 grams, chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, grated
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Dill - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and grated carrot to the pot, and cook for an additional 2 minutes, stirring frequently.
  3. Stir in the chopped cabbage, and cook until it begins to soften, about 5-7 minutes.
  4. Add the rice to the pot and stir well to combine with the vegetables.
  5. Pour in the vegetable broth, and season with salt and black pepper. Bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.
  7. Remove from heat and stir in the chopped dill and lemon juice. Adjust seasoning if necessary.
  8. Let it sit covered for 5 minutes before serving to allow the flavors to meld.
