Ingredients

  • Cabbage leaves - 6 large leaves
  • Long-grain rice - 100 grams
  • Onion - 1 medium, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 300 ml
  • Tomato sauce - 100 grams

Steps

  1. In a large pot, bring water to a boil and blanch the cabbage leaves for 2-3 minutes until softened. Remove and let them cool.
  2. In a pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the rice to the pan and stir for 2 minutes, then add 200 ml of vegetable broth, salt, and pepper. Cook until the rice is partially cooked, about 10 minutes.
  4. Remove the pan from heat and mix in the parsley, dill, and lemon juice. Allow the filling to cool slightly.
  5. Place a cabbage leaf on a flat surface, add 2-3 tablespoons of the rice mixture at the base of the leaf, fold in the sides, and roll it up tightly. Repeat with the remaining leaves and filling.
  6. In a large pot, spread a thin layer of tomato sauce at the bottom. Arrange the stuffed cabbage rolls seam-side down in the pot. Pour the remaining vegetable broth and tomato sauce over the rolls.
  7. Cover the pot and simmer on low heat for 30 minutes until the cabbage is tender and the rice is fully cooked.
  8. Serve warm, drizzled with a little olive oil and a squeeze of lemon juice if desired.
