Ingredients
- Cabbage leaves - 6 large leaves
- Long-grain rice - 100 grams
- Onion - 1 medium, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 300 ml
- Tomato sauce - 100 grams
Steps
- In a large pot, bring water to a boil and blanch the cabbage leaves for 2-3 minutes until softened. Remove and let them cool.
- In a pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the rice to the pan and stir for 2 minutes, then add 200 ml of vegetable broth, salt, and pepper. Cook until the rice is partially cooked, about 10 minutes.
- Remove the pan from heat and mix in the parsley, dill, and lemon juice. Allow the filling to cool slightly.
- Place a cabbage leaf on a flat surface, add 2-3 tablespoons of the rice mixture at the base of the leaf, fold in the sides, and roll it up tightly. Repeat with the remaining leaves and filling.
- In a large pot, spread a thin layer of tomato sauce at the bottom. Arrange the stuffed cabbage rolls seam-side down in the pot. Pour the remaining vegetable broth and tomato sauce over the rolls.
- Cover the pot and simmer on low heat for 30 minutes until the cabbage is tender and the rice is fully cooked.
- Serve warm, drizzled with a little olive oil and a squeeze of lemon juice if desired.
