Ingredients
- Lagana bread - 100 grams
- Fusilli pasta - 150 grams
- Extra virgin olive oil - 2 tablespoons
- Garlic cloves - 2, minced
- Cherry tomatoes - 200 grams, halved
- Fresh basil - 10 grams, chopped
- Feta cheese - 50 grams, crumbled
- Salt - to taste
- Black pepper - to taste
- Water - 1.5 liters for boiling pasta
Steps
- Bring 1.5 liters of water to a boil in a large pot and add a pinch of salt.
- Add the fusilli pasta and cook according to package instructions until al dente, about 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and add it to the skillet with the tomatoes.
- Mix well and add a bit of the reserved pasta water if the mixture seems dry.
- Stir in the chopped basil and season with salt and black pepper to taste.
- Remove from heat and gently fold in the crumbled feta cheese.
- Serve the pasta immediately alongside warm slices of Lagana bread.
