Ingredients

  • Lagana bread - 100 grams
  • Fusilli pasta - 150 grams
  • Extra virgin olive oil - 2 tablespoons
  • Garlic cloves - 2, minced
  • Cherry tomatoes - 200 grams, halved
  • Fresh basil - 10 grams, chopped
  • Feta cheese - 50 grams, crumbled
  • Salt - to taste
  • Black pepper - to taste
  • Water - 1.5 liters for boiling pasta

Steps

  1. Bring 1.5 liters of water to a boil in a large pot and add a pinch of salt.
  2. Add the fusilli pasta and cook according to package instructions until al dente, about 8-10 minutes.
  3. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  4. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  5. Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
  6. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and add it to the skillet with the tomatoes.
  7. Mix well and add a bit of the reserved pasta water if the mixture seems dry.
  8. Stir in the chopped basil and season with salt and black pepper to taste.
  9. Remove from heat and gently fold in the crumbled feta cheese.
  10. Serve the pasta immediately alongside warm slices of Lagana bread.
