Ingredients

  • All-purpose flour - 200 grams
  • Water - 100 ml
  • Olive oil - 30 ml
  • Garlic - 2 cloves, minced
  • Black olives - 80 grams, pitted and sliced
  • Fresh parsley - 10 grams, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. In a mixing bowl, combine the flour and salt. Gradually add water while stirring until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth.
  2. Cover the dough with a clean cloth and let it rest for 15 minutes.
  3. Roll out the dough into thin sheets (about 1-2 mm thick) and cut into your preferred pasta shape, such as fettuccine or tagliatelle.
  4. Bring a large pot of salted water to a boil. Add the pasta and cook for 3-4 minutes until al dente, then drain and set aside.
  5. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  6. Add the sliced olives and red pepper flakes (if using) to the skillet and cook for another 2 minutes.
  7. Add the cooked pasta to the skillet and toss well to coat in the olive oil and garlic mixture. Season with black pepper and mix in the chopped parsley.
  8. Serve immediately, garnished with additional parsley if desired.
