- All-purpose flour - 200 grams
- Water - 100 ml
- Olive oil - 30 ml
- Garlic - 2 cloves, minced
- Black olives - 80 grams, pitted and sliced
- Fresh parsley - 10 grams, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- In a mixing bowl, combine the flour and salt. Gradually add water while stirring until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth.
- Cover the dough with a clean cloth and let it rest for 15 minutes.
- Roll out the dough into thin sheets (about 1-2 mm thick) and cut into your preferred pasta shape, such as fettuccine or tagliatelle.
- Bring a large pot of salted water to a boil. Add the pasta and cook for 3-4 minutes until al dente, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the sliced olives and red pepper flakes (if using) to the skillet and cook for another 2 minutes.
- Add the cooked pasta to the skillet and toss well to coat in the olive oil and garlic mixture. Season with black pepper and mix in the chopped parsley.
- Serve immediately, garnished with additional parsley if desired.
