Ingredients

  • All-purpose flour - 200 grams
  • Eggs - 1 large
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Water - 50 ml
  • Cherry tomatoes - 150 grams, halved
  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Fresh basil - 10 grams, chopped
  • Oregano - 1 teaspoon, dried
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the egg and olive oil.
  2. Gradually mix in the flour with a fork, then knead the dough by hand for about 5-7 minutes until smooth. If the dough is too dry, add the water a little at a time until it is pliable.
  3. Wrap the dough in plastic wrap and let it rest for 15 minutes.
  4. Meanwhile, heat a tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  5. Add the diced zucchini and bell pepper to the skillet. Cook for about 5 minutes until they start to soften, then add the halved cherry tomatoes, oregano, and black pepper. Cook for another 3-4 minutes until the tomatoes are soft.
  6. Roll out the rested pasta dough on a floured surface to your desired thickness, then cut into your preferred shape (fettuccine or tagliatelle).
  7. Bring a pot of salted water to a boil and cook the pasta for 2-3 minutes until al dente.
  8. Drain the pasta and add it directly to the skillet with the vegetables. Toss to combine and heat through for 1 minute.
  9. Remove from heat, stir in the chopped basil, and serve topped with grated Parmesan cheese, if desired.
