  • Celery - 1 stalk, diced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 medium, peeled and chopped
  • Ground lamb - 200 grams
  • Chicken broth - 500 milliliters
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until translucent, about 5 minutes.
  3. Stir in diced carrot, celery, and bell pepper, cooking for another 5 minutes until softened.
  4. Add the ground lamb to the pot, breaking it apart with a spoon, and cook until browned, about 7-8 minutes.
  5. Incorporate the chopped tomato, paprika, cumin, salt, and black pepper, stirring to combine.
  6. Pour in the chicken broth and bring to a boil.
  7. Reduce heat to low and let simmer for 15-20 minutes to allow flavors to meld.
  8. Stir in chopped parsley and lemon juice just before serving.
