- Zucchini - 1 medium, diced

- Vegetable broth - 500 ml
- Tomato - 1 medium, diced
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the diced carrot and celery, cooking for another 5 minutes until tender.
- Stir in the zucchini and potato, cooking for an additional 5 minutes.
- Pour in the vegetable broth and add the diced tomato, fresh parsley, dried oregano, salt, and black pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes until the vegetables are soft.
- Remove from heat and stir in the lemon juice before serving.
