  • Celery - 1 stalk, diced
  • Zucchini - 1 medium, diced
  • Potato - 1 medium, diced
  • Vegetable broth - 500 ml
  • Tomato - 1 medium, diced
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the diced carrot and celery, cooking for another 5 minutes until tender.
  4. Stir in the zucchini and potato, cooking for an additional 5 minutes.
  5. Pour in the vegetable broth and add the diced tomato, fresh parsley, dried oregano, salt, and black pepper.
  6. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes until the vegetables are soft.
  7. Remove from heat and stir in the lemon juice before serving.
