Ingredients

  • Green lentils - 100 grams
  • Carrot - 1 medium, diced
  • Celery stalk - 1, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the green lentils under cold water and set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, diced carrot, and diced celery to the pot. Sauté for another 5 minutes until the vegetables begin to soften.
  4. Stir in the rinsed lentils, vegetable broth, dried oregano, salt, and black pepper. Bring to a boil.
  5. Once boiling, reduce the heat to low and let the soup simmer for about 25-30 minutes, or until the lentils are tender.
  6. Remove from heat and stir in the chopped parsley and lemon juice just before serving.
