- Green lentils - 100 grams
- Carrot - 1 medium, diced
- Celery stalk - 1, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Dried oregano - 1 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the green lentils under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and diced celery to the pot. Sauté for another 5 minutes until the vegetables begin to soften.
- Stir in the rinsed lentils, vegetable broth, dried oregano, salt, and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low and let the soup simmer for about 25-30 minutes, or until the lentils are tender.
- Remove from heat and stir in the chopped parsley and lemon juice just before serving.
