- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Potato - 1 medium, peeled and diced
- Zucchini - 1 small, diced
- Bell pepper - 1 medium, diced
- Chicken breast - 200 grams, diced
- Chicken broth - 500 milliliters
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sauté until the onion becomes translucent, about 3-4 minutes.
- Stir in the diced carrot, celery, potato, zucchini, and bell pepper. Cook for an additional 5 minutes, stirring occasionally.
- Add the diced chicken breast to the pot and cook until the chicken is lightly browned, about 5 minutes.
- Pour in the chicken broth, bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
- Stir in the chopped parsley, dill, lemon juice, salt, and black pepper. Simmer for another 5 minutes.
- Serve hot, garnished with additional herbs if desired.
