Ingredients

  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Potato - 1 medium, peeled and diced
  • Zucchini - 1 small, diced
  • Bell pepper - 1 medium, diced
  • Chicken breast - 200 grams, diced
  • Chicken broth - 500 milliliters
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sauté until the onion becomes translucent, about 3-4 minutes.
  3. Stir in the diced carrot, celery, potato, zucchini, and bell pepper. Cook for an additional 5 minutes, stirring occasionally.
  4. Add the diced chicken breast to the pot and cook until the chicken is lightly browned, about 5 minutes.
  5. Pour in the chicken broth, bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
  6. Stir in the chopped parsley, dill, lemon juice, salt, and black pepper. Simmer for another 5 minutes.
  7. Serve hot, garnished with additional herbs if desired.
